Omnivore World Tour

Omnivore’s World Tour is back after celebrating its 10th anniversary in 2015, and the 2016 Paris edition, taking place March 6 – 8 at Maison de la Mutualité, is showcasing the creative young cuisine coming out of the city. Over the course of three days, the famed culinary fest will offer 110 demonstrations, five masterclasses, five “fucking dinners,” two pop-up dinners, and plenty more. Concealed behind an unassuming rusty metal and white tile facade is Paris’ latest culinary incontournable, Gare au Gorille. The peculiar name, lifted from an offbeat Georges Brassens song about an escaped gorilla, lends to the old-world-meets-new atmosphere.

Head chef Marc Cordonnier and sommelier Louis Langevin are longtime friends who talked of opening a restaurant together before they turned thirty, a high school pipe dream realized this year when the pair left Paris’ renowned Septime to open their own restaurant in the 17ème.

Heimat: Chef Pierre Jancou’s New Paris Restaurant

I knew we were in for a treat at Heimat the minute we walked in the door. For one of Paris’ most anticipated new restaurants, located in the swanky Palais Royal neighborhood, my expectation was to encounter that certain form of snobbery that increases the closer you get to the center of the city. But the greeting at Heimat is just the opposite; despite being housed in a stony cellar space on rue de Montpensier, the welcome is warm, as is the lighting and the conversation that fill the cavernous yet cosy dining rooms.

Pierre Jancou, the man behind Racines and Vivant, seems to have stepped back from the pretense of his earlier exploits in opening Heimat. It offers a legit list of natural wines, but clearly has an interest in making these wines, and the food they are paired with, accessible to a curious lunch crowd. Heimat joins a handful of comfortable dining spaces – Café de la Nouvelle Mairie and Le Siffleur de Ballons also come to mind – that prove that natural wines have found their home in Paris, and the restaurants that serve them no longer need to have an achingly cool aura or inflated prices.

Over the past few years there has been a lot of conversation around the startling statistic that around one-third of France’s cafes, brasseries and restaurants are actually using pre-frozen ingredients or entire meals that only need a microwave before reaching your plate. In typical French fashion, this was a drawn out discussion that needed a government vote and while restaurants now can mark on their menus “fait maison,” when items are truly made from scratch, you might not always be able to see the menu before sitting down.

A few months ago, I attended a question and answer session about French food and the fait maison/frozen food question was raised. A few people said, “you just should know where to go.” But without any mandate and as a visitor to Paris, “knowing where to go,” is easier said than done. And for first-time tourists, it’s easy to end up somewhere that is beautifully authentic and appears to be using all fresh ingredients but well, isn’t. The Paris Popup: A Week-long Food Fête in the City of Light

Summer may be over, but there’s always something to celebrate in Paris. The end of September marked the long-awaited return of chef Harry Cummins and sommelier Laura Vidal, the well-known duo behind The Paris Popup. An initiative imagined while the pair were working together at Frenchie Restaurant, Paris Popup brings together the best of Harry’s inventive cooking and Laura’s dead-on wine pairings.

The popup group debuted last year with a number of successful one-day events hosted in notable Parisian venues like Verjus, Le Mary Celeste, and Bones. For their events the team worked closely with local suppliers and invited other notable chefs, sommeliers, mixologists, musicians, and artists to participate. After last year’s memorable Food Fest popup, hosted at the novel rooftop bar Le Perchoir, Paris Popup packed its suitcases and skipped town for a prolonged trip around the world. Dropping into the diverse culinary scenes of New York City, Oakland, Montreal, Québec City, and Kyoto, the group made friends and fans as they cooked their way across the globe.

In North America, it’s “back to school.” That time of the year when classrooms fill up and families slip into familiar routines, or start new ones as the youngest step into kindergartens and the oldest fly the nest for college. In France, it’s la rentrée, and is not just about families and their children. Each September, almost the entire population faces their regular routines after a long holiday season.

Since many businesses close for the month of August and three-week holidays are taken for granted, September means Parisians are frantically mourning their fading tans as they get back into the swing of things. Stock that has been arriving slowly over the previous weeks has shop owners scrambling to get their newest collections out on the floor (eg. the Pablo boutiques just announced their collaboration with actress Clémence Poésy, who played Fleur Delacour in the Harry Potter series and dabbles in fashion design on the side). Figs and wild mushrooms also begin to perfume the air at local markets, inspiring chefs to rewrite their menus to reflect on fall’s bounty. And, like Canada or the US, it is also back to school for the young ones.
