An Interview with Raphaële Marchal, Food Writer Extraordinaire & Author of À La Folie

If there’s one name to know in Paris’ fizzing new food scene, it’s that of Raphaële Marchal. Contributing writer to the all-things-sugar magazine, Fou de Pâtisserie, and the Parisian’s go-to guide for young and creative cuisine, Le Fooding, the 26 year-old also runs her own successful food blog, En Rang d’Oignons, and contributes to many of the gastronomic events in Paris.

With names like Pierre Hermé and Jacques Genin in her iPhone contacts, it’s no wonder that Raphaële decided to write a book on pastries. À La Folie, released in Paris on November 10, presents 60 pastry chefs and their signature creations alongside the most exquisite (and mouthwatering!) photos from David Bonnier and Antoine Pesch. With recipes from Christophe Adam’s caramel éclairs to Yann Couvreur’s impeccable millefeuille, to Jacques Génin’s zesty lemon and basil tart, À La Folie is 100% sweet and oh-so Parisian.

Want to impress your husband with your culinary flair? Polish up on your French (an English translation of the book is in the works) and pull out the old KitchenAid. Ethereal Parisian pastries are your well-deserved reward.

We sat down with Raphaële over lunch at AG Les Halles to discuss her favorite sweets, her go-to pastry shops in Paris, and her Montmartre neighborhood.

After selling its cream exclusively at La Grande Épicerie de Paris since its founding in 2013, Maison de la Chantilly opened its first boutique on Rue Cler, dedicated to the art of the French whipped cream. It was first created in the kitchens of the Château de Chantilly to be served at banquets, and is still served in the hamlet restaurant in the château gardens.

Bob’s Bake Shop: A Slice of New York in Paris’ 18th Arrondissement

When he opened his first spot, Bob’s Juice Bar, in 2006, Marc Grossman says he was driven by a simple desire to bring a little of New York to Paris. “It was something from back home, something I missed, health food, juice bars,” says Grossman. The born-and-bred New Yorker, who at one time worked on Wall Street, decided to move to Paris 15 years ago. He married a French girl and never left.

Since opening his first café, he has almost single-handedly changed Parisian’s dining habits for the better, introducing them to things like green juice and rice bowls he calls “Veggie Stew.” However, he says his goal was never to push a health food agenda, but rather serve organic, wholesome, tasty food. “We’re not extreme,” says Grossman. “We have muffins, but we also have salads. We try to mix it up.”

The Paris Popup: A Week-long Food Fête in the City of Light

Summer may be over, but there’s always something to celebrate in Paris. The end of September marked the long-awaited return of chef Harry Cummins and sommelier Laura Vidal, the well-known duo behind The Paris Popup. An initiative imagined while the pair were working together at Frenchie Restaurant, Paris Popup brings together the best of Harry’s inventive cooking and Laura’s dead-on wine pairings.

The popup group debuted last year with a number of successful one-day events hosted in notable Parisian venues like Verjus, Le Mary Celeste, and Bones. For their events the team worked closely with local suppliers and invited other notable chefs, sommeliers, mixologists, musicians, and artists to participate. After last year’s memorable Food Fest popup, hosted at the novel rooftop bar Le Perchoir, Paris Popup packed its suitcases and skipped town for a prolonged trip around the world. Dropping into the diverse culinary scenes of New York City, Oakland, Montreal, Québec City, and Kyoto, the group made friends and fans as they cooked their way across the globe.

Rachel’s Restaurant and Bakery Opens Shop in Paris’ North Marais

Parisians might recognize the name from Rachel’s Cakes in Montreuil, a bakery and catering business that Ohio native, Rachel Moeller, started with her friends, Maria and Birke. In a 60m2 apartment crammed with two stoves and an extra refrigerator in the bedroom, they began to supply fresh, made-to-order bagels, apple pies, muffins, burger buns, and their legendary cheesecakes to Paris eateries like Le Bal Café, Le Camion Qui Fume, and The Broken Arm.

Thanks to inventive pastry chefs (and probably a general fatigue with everything bite-size), two new Parisian pastry shops, L’Eclair de Genie and L’Atelier de l’Eclair, have put the éclair back on the dessert tray.

Popelini Challenges Macarons As Paris’ Favorite Bite-Size Treat

Popelini is a little slice of heaven that specializes in something oh so precious…. choux à la crème. I had passed their adorably lit storefronts many a time, thinking to myself, gosh, I’ve got to check this place out… I finally popped in to give their cream puffs a taste recently, and I was not disappointed.

Popelini is the name of the chef who invented choux à la crème in 1540. Surprisingly enough, he was Italian. Who would have known that this delightful French specialty was conceived in Italy?
