À La Folie, Stéphane de Bourgies
If there’s one name to know in Paris’ fizzing new food scene, it’s that of Raphaële Marchal. Contributing writer to the all-things-sugar magazine, Fou de Pâtisserie, and the Parisian’s go-to guide for young and creative cuisine, Le Fooding, the 26 year-old also runs her own successful food blog, En Rang d’Oignons, and contributes to many of the gastronomic events in Paris.
With names like Pierre Hermé and Jacques Genin in her iPhone contacts, it’s no wonder that Raphaële decided to write a book on pastries. À La Folie, released in Paris on November 10, presents 60 pastry chefs and their signature creations alongside the most exquisite (and mouthwatering!) photos from David Bonnier and Antoine Pesch. With recipes from Christophe Adam’s caramel éclairs to Yann Couvreur’s impeccable millefeuille, to Jacques Génin’s zesty lemon and basil tart, À La Folie is 100% sweet and oh-so Parisian.
Want to impress your husband with your culinary flair? Polish up on your French (an English translation of the book is in the works) and pull out the old KitchenAid. Ethereal Parisian pastries are your well-deserved reward.
We sat down with Raphaële over lunch at AG Les Halles to discuss her favorite sweets, her go-to pastry shops in Paris, and her Montmartre neighborhood.

After living in Paris for 4 months last year, it started to feel like home. Of course I was overjoyed to return to my family, friends and my own bed, but let’s face it; life in France is a little bit different from life in the good old USA. Now that I’m planning my return trip, I’m reminded of all the things I’ve been missing since my last visit…

When I think of returning to Paris, I’m disproportionately excited about the incredible food I’ll be eating; the often touted, widely available steak tartare (I have to stop myself from having it every meal), rice pudding at L’ami Jean, and raw milk cheeses that are so potent and pungent, they’ll knock your socks off. Without a doubt though, the one thing I am most excited for is a very special pastry called the Escargot au Chocolat: an unbelievable trifecta of croissant, crème patissière and chocolate. You won’t find them everywhere, but my favorite neighborhood boulangerie in the 7th, Pain D’Epice, has them warm and melty every morning. Hurry though, they sell out fast! I usually pair it with a warm baguette topped with lait cru Camembert and a dollop of apricot jam. It’s my idea of the perfect breakfast, and possibly the reason why I gain so much weight every time I go to France! Continue Reading »

Julien Hausherr – La Pagode theater’s Japanese style garden
While this list might appear to be a whimsically chosen, feel-good assortment of Parisian places and experiences, I’ll have you know that I agonized over the decisions herein. For instance, I couldn’t bring myself to include two houses of taxidermy (for fear of revealing myself to be a complete freak), so I had to make a heart-wrenching choice: Deyrolle or the Musée de la Chasse? A weighty conundrum indeed. Regardless, I’ve done my best to crystallize my love affair with Paris into ten snippets. Enjoy!
1. Bang-for-your-buck meal: The 12-Euro prix fixe lunch at Robert et Louise. Entrée, plat, roaring fire, convivial conversation with neighboring diners. Can’t do much better than that.
2. Inner-child indulgence: Is it just me, or does the Musée de la Chasse et de la Nature make you believe in magic? I’m convinced that the taxidermy fox curled up on a Louis XV chair knows the meaning of life, if only I could get him to open up about it.
3. Street food: Roast chicken from the place on rue Mouffetard (just south of the produce stand on rue de l’Arbalète). Simply put: the chicken that changed my life. Pair with a little Dijon and you will instantly be transported to heaven. Chicken heaven.

4. Rainy day activity: Sneaking off to a film at La Pagode, a charming art house theater that was originally erected as an Eastern-themed ballroom in 1896. Dusty and elegant, it’s the perfect escape. Continue Reading »

Now that Paris Fashion Week is over, we can all get back to what we really love… food. Paris’ 20th annual Semaine du Goût (“Taste Week”) kicked off on Saturday and runs through next Sunday, the 18th. During this annual event, Paris becomes even more food-focused than it normally is, celebrating its culinary traditions and spotlighting up-and-coming talent.

I have long believed that Paris and New York are jealous lovers—mutually obsessed, covetous, but still fiercely stubborn and, ultimately, true only to themselves. Nowhere is this dynamic more apparent than in the kitchen, where American innovation has borrowed from (and then challenged) the French standard that has dominated for so long. This Friday and Saturday, in a glorious and long overdue collision of American and French culinary love, P.S. 1 will play host to Le Fooding d’Amour Paris-New York. For all our New York-based readers, you may not be able to justify a trip across the Atlantic, but you have no excuse not to make it across the East River. Continue Reading »
