Paris’ favorite burger maven is going green. Kristin Frederick, creator of beloved food truck, Le Camion Qui Fume, recently opened a California bowl-inspired restaurant in the 11th arrondissement, and it’s quickly becoming a warm-weather go-to.
Tucked away on rue Crespin du Gast, in the former location of Frederick’s Freddie’s Deli, GreenHouse is refreshing in every sense.
The concept for the restaurant follows Frederick’s personal journey, from focusing on “American junk food revisited” to committing to clean and organic eating. “I respect the philosophy of people producing bio… they take extra steps not to use pesticides and are paying attention,” Frederick shared.
That said, both Frederick and GreenHouse Chef, Pablo Jacob, are putting their Ecole Ferrandi training to good use and creating elevated veggie-focused fare. The rotating menu, which can be enjoyed sur place or taken to-go, features a handful of entrées, plats, and natural wines. I started with the hearty arepas and finished with a quinoa bowl as beautiful as it was delicious.
Though the space is small, the décor is a playful mix of modern – with white subway tiles and letter board menu hanging overhead – and vintage – with old-school plant prints and used books lining the sparse shelves.
The outdoor space features a lovely tree-canopied terrasse and open community garden – filled with fresh herbs, cabbage, lettuces, chiles, rhubarb, strawberries, and more – with products available to the neighboring community at no charge.
